Instant yeast (RapidRise, Bread Machine, SAF-Instant) has higher viability and smaller granules than Active Dry yeast. To convert Instant to Active Dry, multiply by 1.25 (Active Dry = Instant × 1.25).

If a recipe calls for 1 teaspoon of Instant yeast, use 1 1/4 teaspoons of Active Dry yeast. Active dry yeast should ideally be bloomed in 105°F water for 5 minutes to verify vitality before kneading.
